The Institute of Horticulture’s Apple Dessert with Rye Bread Wins a Gold Medal

The apple dessert with rye bread, created by Dr. sc. ing. Dalija Segliņa, Head of the Processing and Biochemistry Unit at the Institute of Horticulture, has received a Gold Medal in the “Flavour of Regions 2025” (“Novadu garša”) competition, which annually brings together Latvia’s finest local producers and food innovators.
This dessert stands out for its natural composition, balanced flavour, and innovative approach to traditional Latvian ingredients – apples and rye bread.

Inese Ebele, Director of the Institute of Horticulture, emphasizes:
“We are very proud of the Gold Medal awarded to our apple dessert with rye bread in the ‘Flavour of Regions’ competition. This product is special – it combines the traditional taste of Latvia with a modern approach. We see great export potential in it, as the dessert has a long shelf life, is easy to transport, and ready to enjoy at any time – perfectly suited for today’s fast-paced lifestyle. We have also started discussions with a company that may be interested in bringing this vision to life.”

In total, 88 producers submitted 191 products to the “Flavour of Regions 2025” product quality competition, of which 40 received gold, 56 silver, and 43 bronze medals.
The products were evaluated by 35 experts from various fields – food technologists, chefs, restaurant and beverage studio owners, entrepreneurs, and quality management specialists – who acknowledged that the overall quality of submissions this year was particularly high.

For several years, the Institute of Horticulture has been developing innovative fruit and berry processing products to promote the full use of local resources and strengthen the competitiveness of Latvian food producers both in the local and international markets.
